CABBAGE RED is a mixture product of anthocyanins which is extracted from red cabbage. In addition to various anthocyanins, it also contains substances such as flavones and tannins. The character of anthocyanins is as follows: it presents stable purple red shade in acidic environment, it becomes purplish when the environment changes to neutral, and it goes to blue or green shade when the environment changes into strong alkaline. Anthocyanin keeps stable only in the acid environment. Cabbage red has a good stability to light and heat.
Typical application: vegetable soup, biscuit fillings, jelly, confectionary, etc.
Using method: pick requested amount of Cabbage Red and dissolve in acidic water around pH 3, then add the aqueous solution into the end product.
